Cannelini & Tomato Autumn Breakfast Beans

olive oil
1 small onion sliced
3-4 garlic cloves minced

1 can of tomatoes (400g)
1 can of cannellini beans (rinsed)
1 cup of stock (I used homemade chicken stock, but you can also sub for veggie stock)
a pinch of sea salt and black pepper
a pinch of chilli powder
4 eggs
large handful of spinach leaves
Instructions
1. Heat oil in a medium frypan and add onions and garlic.
2. Once onions are soft, add herbs and chilli powder, cook for another minute or so.
3. Add tomatoes, beans, and stock, cook for approximately 10 minutes on medium heat
4. Add salt and pepper and spinach leaves.
5. Make a small well and crack eggs into wells. Cover the pan and cook until eggs are at the consistency you prefer. Personally I like to have my yolks runny.
6. Serve with wholegrain toast
