Tomato & Butter Bean Soup

This easy soup is one of my go-to recipes when I'm feeling lazy and want to quickly throw something together that's delicious and comforting but still healthy.

Ingredients:

  • 1-2 cans of tomatoes (preferably diced)

  • 1 large onion, finely chopped

  • 2-3 cloves of garlic, minced

  • 1 tsp of Italian herbs and spices (adjust according to preference)

  • Freshly ground black pepper to taste

  • A handful of fresh basil leaves, for garnishing

  • 1 cup of coconut milk

  • 1 can of butter beans, drained and rinsed

  • Wholemeal bread

  • Cheese of your choice (for the toastie)

Instructions

  • In a large pot, sauté the onions until they turn translucent. Add in the garlic and sauté for another 2 minutes or until fragrant.

  • Pour in the canned tomatoes, adding the Italian herbs and spices. Let the mixture simmer for about 10-15 minutes, make sure you cook some of the water off so that the soup doesn't turn out too watery.

  • Add in the coconut milk and butter beans. The butter beans, add a nice chunkiness and are a great source of protein and fiber.

  • Allow the soup to simmer on a low flame for 15-20 minutes. This ensures that all the ingredients are well-combined.

  • While the soup is simmering, prepare your cheese toastie. Simply place your choice of cheese between two slices of wholemeal bread and toast until the bread is golden brown and the cheese is melted.

  • Pour the soup into bowls, garnish with fresh basil leaves, and serve hot with the cheese toastie on the side. Enjoy!
